Shrimp & Avocado Salad

How many of you like using your oven in the summer?

Not me! I don’ t like being hot unless there’s a big body of water nearby. That’s one of the reasons I love this salad. It qualifies as a good meal for my hubby because there’s meat on it. But it’s a good meal for me too because I don’t have to use the oven.

The only heat this salad takes is a little time from the stove to prepare the shrimp. I usually use pre-cooked shrimp and just use the stove to get it hot and meld the seasonings together.

This recipe comes from my Simple & Delicious magazine. It’s a perfect salad for hot summer days and the presentation is beautiful. If you love avocado like I do, I recommend using 2 instead of 1. Other than that, I wouldn’t change a thing.

Shrimp & Avocado Salad

A scrumptious summer salad via Simple & Delicious magazine

Ingredients

  • 1 pound uncooked large shrimp, peeled and deveined
  • 1 small garlic clove, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 2 teaspoons olive oil
  • 5 cups hearts of romaine salad mix
  • 1 cup fresh or frozen corn, thawed
  • 1 cup frozen peas, thawed
  • 1/2 cup chopped sweet red pepper
  • 1 medium ripe avocado, peeled and thinly sliced
  • CILANTRO VINAIGRETTE:
  • 7 tablespoons olive oil
  • 1/4 cup minced fresh cilantro
  • 1/4 cup lime juice
  • 1-1/2 teaspoons sugar
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large skillet, cook the shrimp, garlic, chili powder, salt and cumin in oil over medium heat for 3-4 minutes or until shrimp turn pink; set aside.
  2. In a large bowl, combine the romaine, corn, peas and red pepper; divide among four serving plates. Top each with shrimp and avocado.
  3. Whisk the vinaigrette ingredients in a small bowl.
  4. Drizzle over salads.

    This is one of our favorite meals, and I’m not even a huge fan of shrimp! Don’t skip the dressing, it’s amazing. So fresh!
