How many of you like using your oven in the summer?
Not me! I don’ t like being hot unless there’s a big body of water nearby. That’s one of the reasons I love this salad. It qualifies as a good meal for my hubby because there’s meat on it. But it’s a good meal for me too because I don’t have to use the oven.
The only heat this salad takes is a little time from the stove to prepare the shrimp. I usually use pre-cooked shrimp and just use the stove to get it hot and meld the seasonings together.
This recipe comes from my Simple & Delicious magazine. It’s a perfect salad for hot summer days and the presentation is beautiful. If you love avocado like I do, I recommend using 2 instead of 1. Other than that, I wouldn’t change a thing.

A scrumptious summer salad via Simple & Delicious magazine
Ingredients
- 1 pound uncooked large shrimp, peeled and deveined
- 1 small garlic clove, minced
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground cumin
- 2 teaspoons olive oil
- 5 cups hearts of romaine salad mix
- 1 cup fresh or frozen corn, thawed
- 1 cup frozen peas, thawed
- 1/2 cup chopped sweet red pepper
- 1 medium ripe avocado, peeled and thinly sliced
- CILANTRO VINAIGRETTE:
- 7 tablespoons olive oil
- 1/4 cup minced fresh cilantro
- 1/4 cup lime juice
- 1-1/2 teaspoons sugar
- 1 small garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- In a large skillet, cook the shrimp, garlic, chili powder, salt and cumin in oil over medium heat for 3-4 minutes or until shrimp turn pink; set aside.
- In a large bowl, combine the romaine, corn, peas and red pepper; divide among four serving plates. Top each with shrimp and avocado.
- Whisk the vinaigrette ingredients in a small bowl.
- Drizzle over salads.

This is one of our favorite meals, and I’m not even a huge fan of shrimp! Don’t skip the dressing, it’s amazing. So fresh!
