{Freezable} Pumpkin Dinner Rolls

fill up your freezer graphic I love easy. I also love tasty. Sometimes the two don’t go together. But whenever they do – I’m all there. This is one of those recipes where {easy + tasty} collide.

I made these pumpkin rolls for Thanksgiving dinner. It was my first time making a whole turkey and some of my husband’s family was there for the occasion. I didn’t want to be stressed out in the kitchen all morning {because we went to the Thanksgiving parade that morning!}, so I did as much beforehand as I could. I made this recipe a couple weeks before Thanksgiving, popped the dough in the freezer, and then pulled them out to thaw & rise the morning of the big meal. Just pull out as many as you’ll need & place them on a greased baking sheet.

Cover with a damp towel and let rise for 3-4 hours.

Once baked, brush the tops with melted butter, and serve. Best when eaten warm and slathered with butter.

{Freezable} Pumpkin Dinner Rolls

Ingredients

  • 1 cup sugar
  • 1/2 cup warm water
  • 2 cups warm milk
  • 1/4 cup butter, melted
  • 2 cups cooked & mashed pumpkin
  • 2 teaspoons salt
  • 6 cups whole wheat flour
  • 5-6 cups all purpose flour
  • 7 teaspoons yeast

Instructions

  1. Combine first 6 ingredients in large mixing bowl.
  2. Add 7 cups flour and yeast. Mix, and continue to add flour until dough is elastic and not sticky.
  3. Place dough in greased bowl, cover, and let rise for 1 hour.
  4. Divide dough into thirds. Divide each third into 16 pieces and shape into balls.
  5. IF FREEZING: Place balls on ungreased cookie sheet. Freeze until firm, place in freezer safe bag, and freeze until firm.
  6. TO BAKE: Place frozen balls on greased cookie sheet, cover with a damp towel, and let rise in a warm place for 3-4 hours. Bake at 350 degrees for 13-15 minutes. Brush with melted butter.

  1. I just froze some cookie dough last week! I’ll be having a baby soon (#4) and it will be nice to give my older boys a special treat without much effort. Especially since they are on spring break when the baby arrives! These dinner rolls sound amazing, so they are up next! Thanks for the great ideas!
