I should really rename this post “Cook Once. Eat Several Times.” But that doesn’t sound quite as good. So I’m sticking with the original.
How amazing would it be to walk into your kitchen, pop something in the oven, and sit down to dinner in less than an hour with NO prep?
That’s what I’m talking about.
And it’s called Freezer Cooking.
Another way to accomplish this would be to stock up on frozen foods at the grocery store. BUT. Allow me to introduce you to a different method with the same {& even better!} results.
Do you ever make soup? Next time you make chili, double – or even triple – the recipe. After it’s cooked and cooled, pour the soup into a freezer bag, label it, and pop it in your freezer. Boom. You just saved yourself a couple nights of cooking.
I am a firm believer in freezer cooking. Here are some things I have made for the freezer:
- homemade pizza dough
- bean + cheese burritos
- breakfast burritos
- veggie chili
- chicken chili
- cornbread
- frozen cookie balls
- homemade biscuits
- wild rice soup
- chicken poppyseed casserole
- homemade scones
- muffins
- pumpkin dinner rolls
- stuffed shells
- breakfast sandwiches
- etc. etc. etc.
How do I use the things in my freezer?
- “I forgot about dinner” meals
- date night treats
- for drop in visitors
- taking meals to people in need
- as gifts to neighbors {loved this post about ministering to neighbors!}
- to prepare for big holiday meals
- in preparation for a new baby
I cannot tell you how many times I’ve been able to pull something out of the freezer for dinner instead of going out to eat. I truly enjoy going out to eat. But I like for it to be something we’ve planned on and can look forward to instead of a “ummm…well, we have plenty of crackers, peanut butter, and pickles!” kinda deal. I love it so much I even wrote a series about it last year. Yum.
The simplest way I’ve found to get freezer cooking done is to just cook in bulk. When I’m making something in the crockpot, I throw in extra ingredients so that there will be something left to freeze. It is seriously that simple.
