Mozzarella Pepperoni Bread

Say hello to one of the easiest entrees you’ve ever created:

Does it look intimidating? O good. At least something I do looks impressive. 😉 haha – kidding!

Yes, this really is easy. And cheesy

And overall amazingly delicious:

But wait. Did I say this was family-friendly? In fact, even my little girl got in on the action:

Oh – and it’s pretty quick to make too. About 10 minutes of prep time (or 15 if you enlist small helpers like I did) and 12-15 minutes in the oven. That’s under 30 minutes, folks. That’s good. 🙂

I found this recipe in my Simple & Delicious magazine – most likely my favorite food mag ever. I followed it exactly; no originality here. Well, to tell you the truth, I actually didn’t have fresh parsley on hand, so I used dried. {gasp!} It’s okay. We all survived and no taste buds were ruined in this process.

Mozzarella Pepperoni Bread
from Simple & Delicious

Ingredients:

  • 1 loaf (1 pound) unsliced french bread
  • 3 Tblsp melted butter
  • 3 ounces sliced pepperoni
  • 1 1/2 cups shredded mozzarella cheese
  • 3 Tblsp minced fresh parsley

Directions:

Cut bread into 1 inch slices, being sure to leave slices attached at the bottom. Brush butter on both sides of each slice. Stuff with pepperoni, cheese and parsley. Place on an ungreased baking sheet (or use a pizza stone like I did) and bake at 350 degrees for 12-15 minutes or until cheese is melted.

 

We just sliced and served after it came out of the oven:

We loved this bread, but my hubby suggested adding pizza seasoning to it next time we make it. We’ll probably add more cheese next time too. We do love cheese in our family.

This would be a great thing to make for a family night! Get your kids involved with the buttering…

…and stuffing and then you can even eat it while watching a movie or playing a game together. Finished off with some brownies and ice cream…perfection.
